When I was little I LOVED chocolate pudding. This Paleo Chocolate Pudding is one that will be on a weekly rotation at my house.
It’s packed full of healthy fats from the avocado and is just sweet enough to tastes like my favorite 85% dark chocolate bar. I usually just dig in with a spoon immediately after blending but it’s especially good when topped with cacao nibs, unsweetened coconut, or some raspberries or sliced strawberries.
Also, fun tip…If you let it chill in the fridge for awhile it will become almost icing like in texture. You could totally use it as a Paleo compliant frosting or revert back to your old days of eating frosting with a spoon…not that I ever did that or anything..
- 1 avocado
- ¼ cup cocoa powder
- 1 tablespoon honey
- ¼ teaspoon vanilla extract
- Peel the avocado and remove the pit
- Place all ingredients in a blender or food processor and blend until smooth and no avocado clumps remain
**If you’d like it more on the sweeter side feel free to add a bit more honey
