As much as I love cooking, working 50 hours a week can really put a damper on cooking good healthy meals during the week. I know you can relate. One of the reasons I love this recipe, is that it only takes about 5 minutes to prep and 30 minutes to cook. A working woman’s dream!

Jambalaya is a Cajun dish of rice with shrimp, chicken, and vegetables. It can include any combination of chicken, crawfish, sausage, shrimp or diced ham. For now, I am going to stick with sausage for this recipe.

Lets get to this Jambalaya, shall we?


  • 1 package of beef kielbasa
  • 1 Bay leaf
  • ½ cup celery
  • 3 cloves garlic
  • ½ cup green bell pepper
  • 1 (14.5 oz) can tomatoes
  • 1 Yellow onion, medium
  • 1 (14 oz) can chicken broth
  • 1 tsp of hot sauce
  • 1 cup rice
  • 1 & ½ tsp salt
  • 2 tbsp butter

Chop up the veggies and garlic. Heat oil in a medium skillet over medium-high heat and sauté veggies for 6-7 minutes. Add tomatoes with their juice, creole seasoning, salt and hot sauce. Stir to combine.

Cut the kielbasa into 1-inch chunks. Add the rice, kielbasa, bay leaf and chicken stock. Stir to combine. Bring mixture ot a boil, reduce the heat to low, cover and simmer for 25 minutes. Remove from heat and let sit, covered for 5 minutes.

Remove the lid and fluff the rice with a fork. Serve immediately.
