Crock-Pot Fajitas and Pineapple Lime Margaritas

Ahh fajitas, the sizzling entrée that everyone loves. I always order fajitas when I go to a Mexican restaurant but I honestly don’t make them at home too often. I just wanted a lazier way to make them to eliminate all of the marinating and so forth. So today, I am sharing this incredibly easy recipe for Crock-Pot fajitas.

I absolutely love this simplified fajita recipe! It makes a great weeknight dinner and definitely a crowd pleasing and husband approved meal! It makes plenty, so leftovers it is!



  • 1 lb chicken breast
  • 1 lb flank steak
  • 4 cloves of Garlic
  • 1 yellow, green and red pepper
  • 1 (14.5 oz) can of tomatoes with green chilies
  • 1 yellow onion, large
  • 1 tbsp honey
  • 1 tsp of paprika
  • 3/4 tsp of pepper
  • 1 tsp of salt
  • 2 tsp of cumin
  • 2 ½ tsp of chili powder

For serving

  • Corn tortillas
  • Sour cream
  • Cilantro
  • Salsa
  • Guacamole
  • Monterrey jack or Cheddar cheese

Cut chicken and steak into even strips. Pour half of the canned tomatoes into the bottom of the slow cooker and spread into an even layer. Top with half of the peppers and half of the onions. Sprinke in the garlic. Top with chicken and steak.

In a bowl, whisk together chili powder, cumin, paprika, salt and pepper. Evenly sprinkle the seasoning over the chicken and steak. Top with remaining half of tomatoes, then layer in the remaining peppers and onions.

Cover and cook on high for 3-4 hours or low heat for 6-8 hours., until the chicken and steak is cooked through and the veggies are tender. My preference is to always cook on low heat. I think it helps get the meat more tender and the spices to marry together.

In a small bowl, whisk together lime juice and honey and add to the slow cooker. Gently toss.

Serve warm in warmed tortillas.


Pineapple Lime Margarita

Now, who can have Mexican food without a Margarita? I know I cant!


6 ingredients – 1 serving

  • 2 oz freshly squeezed lime juice
  • ½ oz of Agave nectar (can also use simple syrup
  • 3 oz of Tequila
  • 1 oz of fresh pineapple juice
  • 1 oz of Grand Marnier (can also use Triple Sec)

Put two big handfuls of ice cubes into a cocktail shaker. Add remaining ingredients. Shake for a good 10 seconds.

Fill glass with ice cubes. Pour contents of shaker over top.
